Ingredients
8 Roma Tomatoes2 Tbls Olive Oil4 Oz Prosciutto1 Lbs Whole Wheat Pasta1 clove garlicSalt, Pepper, Basil, Cheese to garnish
Directions
Boil Roma tomatoes in water until it is easy to remove skins. Remove tomatoes from water and remove tomato skins, slice tomatoes and set aside. Boil past as directed in tomato water. Add olive oil and a bit of garlic to deep skillet. Sautee until garlic is tender. Add tomatoes and basil to skillet, cook for 5 minutes. Add prosciutto and toss pasta with sauce. Garnish with fresh basil, cheese, salt and pepper.
