2 lbs ground turkey breast15 oz Ricotta Cheese, part skim milk, 1 cup Sour Cream, reduced fat, 1.25 cup Cheddar or Colby Cheese, Low Fat, shredded 2.5 cups Salsa4 oz can Green Chili Peppers, 4 tbsp Lawry's Taco Seasoning 1 small onion, chopped 3 small Shallots, chopped 2.5 La Tortilla Factory, Large Original Low Carb Tortilla2 tbsp Olive Oil, 2 tbsp
Preheat oven at 350 degrees.
Brown onions and shallots in olive oil. Add turkey and taco seasoning. Brown- add water if needed to mix seasoning throughout.
Mix ricotta, sour cream and chilies in a bowl.
Spray 13x9 pan. Spread 1 cup salsa on bottom. Layer 1/2 the tortilla on salsa. Spread 1/2 the cheese mixture on tortillas followed by 1/2 the turkey mixture. Sprinkle 1/2 cup cheddar cheese on turkey. Spread another 1 cup salsa over turkey. Follow with remaining tortilla, cheese mixture and turkey. Spread remaining salsa and cheddar cheese on top and bake for 30 minutes.
