Greek Almond Cookies

Ingredients
1 lb. butter1/4 c. chopped roasted almonds1/4 c. chopped almonds3 egg yolks (reserve 1 egg white for topping)1 c. sugar4.5 c. flour1 Tbsp. almond extract
Directions
Soften butter
Beat butter until white and fluffy
Add sugar gradually
Beat in egg yolks, one at a time
Add almond extract and roasted almonds
Add flour slowly and only enough to make batter
workable but not too stiff
Form balls and dip tops in egg white.
Top with chopped almonds and place on
ungreased cookie sheet
Bake at 350 degrees for 25 minutes.
