Cottage Cheese and Onion Cakes

Ingredients
1/3 c onion, chopped1/4 t salt1/4 t pepper2 T butter1 1/2 c cottage cheese, 4%3 eggs6 T flour
Directions
Cook onion, 1/8 t salt, 1/8 t pepper in 2 T butter in small skillet over low heat until brown, about ten minutes. Transfer to a bowl then add remaining ingredients and whisk until combined. Heat a nonstick skillet over moderate heat until hot but not smoking. Working in batches, scoop 1/8 c batter and cook until bottoms are golden brown, 1-2 minutes. Flip and cook 1-2 minutes more.
