Chicken Helper My Way

2 boxes Betty Crocker Asian Chicken Helper3.5 cups hot water4 tbsp. olive oil1 bag of Kroger Frozen Chicken Breasts in bag4 large eggs
Put oven on 350 to preheat
Add 2 tbsp. olive oil to bottom of baking pan place frozen chicken breasts on the bottom of pan
Mix hot water, seasoning mix and rice from both boxes and pour over the chicken.
Cover with aluminum foil and bake at 350 for approximately 45-60 minutes (be sure rice does not run out of water).
About 5 minutes before it is done, scramble the 4 eggs in the remaining 2 tbsp. of olive oil. Add to the rice and chicken and stir thoroughly dicing or shredding up the chicken througout the mixture.
Makes about 13 1-cup servings
