pumpkin muffins

Ingredients
*Flour, white, 1.5 cup Baking Powder, 1 tsp Baking Soda, 1 tsp Salt, 1/2Cinnamon, ground,1/2tsp Nutmeg, ground,1/2 tbsp Ginger, ground,1/2tsp Egg, fresh, 1 large Granulated Sugar, 1/4cup *Canola Oil, 1/3cup Pumpkin, cooked, 1 cup, mashed Soy Milk, 0.5 cup
Directions
Combine first 8 dry ingredients in large bowl. Stir thoroughly. Make a well in the center.
In seperate bowl beat egg until frothy. Mix in sugar, cooking oil, pumpkin and soy milk. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in 400F (200C) oven for 15-20 minutes. Let stand 5 minutes and then remove from pan. Makes 12 servings
