Foreman Grilled Pepper Veggies!

1 Cup Green Beans1 Cup Green Peppers, sliced into thin strips1 Cup Red Peppers, sliced into thin strips1 Cup Carrots, sliced thin1 Cup Onion, chopped into chunky pieces2 Tbsp Extra Virgin Olive Oil2 Tbsp cracked black pepper Salt to taste
Put all chopped and sliced fresh veggies into mixing bowl. Pour in olive oil and pepper, and stir to coat.
Place veggie mixture onto grill, and cook for approximately 8 minutes, stirring occasionally. For more "steamed" taste, add tablespoons of water as needed. Veggies should be hot, but still fairly crispy.
Makes an excellent side to any meat dish, and served with rice or potatoes.
