Tomato & Basil Pasta Sauce with Crimini Mushrooms & Sauteed Veggies

Ingredients
* 2 tbsp. Olive Oil* 1 tbsp. Garlic, minced, jarred* Fresh-ground Black Pepper, to taste (NOT included in nutritional calculations!)* 2 tbsp. Italian Seasoning, dried* 155g Red Onion, chopped [About 1 medium-sized onion.]* 315g Baby Portabella (Crimini) Mushrooms, sliced [About 16 small / medium-sized, trimmed.]* 350g Red Bell Pepper, chopped [About 2 peppers, seeded.]* 350g Orange Bell Pepper, chopped [About 1 pepper, seeded.]* 1 796-ml can Unico Diced Tomatoes, with liquid * 1 700-ml jar (2.8 cups) Classico Tomato & Basil Pasta Sauce [About 2 3/4 cups.]
Directions
1. In a large skillet, heat 2 tbsp. olive oil, garlic, and pepper over medium-high heat. Also add the dried Italian Seasoning to the oil at this time.
2. Add the onions and sautee for a few minutes, until they start to caramelize.
3. Next add the mushrooms, and sautee for a few minutes more.
4. Add the chopped peppers, and cook for a few minutes more.
5. Finally, reduce the heat a bit, and add the can of diced tomatoes and the can of pasta sauce. Simmer on the stovetop (uncovered) on low until some of the liquid reduces, and you have a thick-rich sauce - this may take 1/2 hour to an hour if you do it on very low heat.
6. Makes seven 'servings', each about one heaping cup-full each. Enjoy! :)
