1 egg1/2 cup granulated sugar1/3 cup butter1 cup unbleached flour1 tsp salt1 tsp baking powder1 tsp soda1 cup Bob's Red Mill 8 grain cereal1 and 1/4 cup buttermilk
Mix cereal and buttermilk and let stand for 10 min-1 hour while preheating oven and assembling other ingredients. Cream sugar, butter and egg. Add dry ingredients and milk/cereal mixture. Stir only until mixed. Add extras (nuts, raisins, chocolate chips or whatever) if desired. Place in muffin pan, greased or lined w/ paper muffin cups. Bake at 400 degrees for 15 minutes or until done. (I use stoneware muffin pan which takes a little longer) Let sit for 15 minutes after removing from oven, then remove from pan. Makes 12 muffins.
