Ingredients
1 Cup Lentils1/4 cup long grain rice4 to 5 cups watersalt and pepper to taste4-5 medium onions roughly chopped2 Tbls Olive Oil or your choice
Directions
Rinse lentils cover with water and bring to a boil. Reduce heat and simmer for 20 minutes add rice and salt and pepper, simmer 25 minutes until rice is cooked. Check now and then to be sure it does not dry out. Should be moist but not soup.
In the mean time have your onions sauteing in another pan until they are as dark as you like. Spoon on top of cooked lentil and rice dish and serve with a green salad. Makes 4 1-cup servings
