Homemade Granola

1 T Extra Virgin Olive Oil3 C Rolled Oats1/3 C Parkay Light1 T Honey1 T Blackstrap Molasses1/3 C Packed Brown SugarPinch of Salt1 t Vanilla2 T Golden Flax SeedsCinnamon to TasteNutmeg to Taste1/2 C Chopped Almonds1/3 C Raisins1/3 C Coconut
Preheat oven 350 degrees. Line a cookie sheet with aluminum foil.
Heat the oil in a large skillet over medium heat. Add oats and cook and stir until they are beginning to brown and crisp, about 5 minutes. Remove from heat and spread out on a cookie sheet to cool.
Melt the margarine in the same pan over medium heat. Stir in honey, molasses and brown sugar, cook stirring constantly until very bubbly all over the pan, add vanilla. Pour oats into the mixture along with flax seeds, cinnamon and nutmeg and cook and stir another 5 minutes.
Turn oven off. Spread oat mixture into the cookie sheet and place into oven until cool.
Once cool, transfer to an airtight container and stir in almonds, coconut and raisins.
Additional fruit and nuts (or even chocolate or carob chips) can be added at this time and stirred in also.
In the morning, I add a little to cornflakes and enjoy it in my cereal. Yum!
