Joseph's Flax, Oat Bran & Whole Wheat Flour Lavash Roll-Ups (1 whole) Sundried Tomato Pesto, Stonewall Kitchen, .25 cupSpinach, fresh, 2 cupsMozzarella Cheese, part skim milk, 2 oz (in small cubes or shredded)Parmesan Cheese, hard, .5 oz (shredded fresh)Carrots, raw, .5 cup, stripsMushrooms, fresh, .25 cup, slices
Preheat the oven to 400
Place lavash on a cookie sheet
Spread the pesto evently over the lavash
Sprinkle on the mozzaella cubes, spreading as evenly as possible
Cover with spinach
Sprinkle finely grated parm over the spinach
Dot with carrots and mushrooms (and any other desired veggies)
Bake at 400 until cheese is melted and edges are crip
