low fat pound cake

Ingredients
1.5 c All purpose flour.5 tsp salt2tsp baking powder1.5 c vanilla lowfat yogurt(I used great value blended vanilla yogurt because that is what i had on hand. you can use fat free if you prefer)3/4 c sugar3/4 c Egg Beaters1Tbs vanilla extract ( I just poured some in but it was more than I usually use so 1 Tbs)
Directions
Pre heat oven to 350 degrees
Spray loaf or muffin pan with non stick spray.
Mix dry ingredients. Combine yogurt, sugar, egg beaters and vanilla. Combine the wet and dry ingredients.
Pour batter into loaf or muffin pan.
bake for about 45min for loaf pan and 25min for muffins.
This make 12 very full muffin cups.

    These are TERRIBLE!!!!! I made them directly to the recipe. They had gummy-like texture and tasted nothing like pound cake. I had to throw the whole batch. NASTY! - 6/10/10
