Crockpot Lemon Chicken

Ingredients
Foster Farms Whole Young Chicken, 3.5-4lb LemonBetter than Bullion Chicken, 2 Tbsp (or 2 chicken bouillion cubes)Paprika, 1/2 tspParsley, dried, 4 tbspFresh Sweet Onion (1 Medium Raw)Parsnips, 2 Red Potato, 2.5 lbsSliced Mushrooms, 1/2 cup
Directions
Remove innards of chicken. Juice the lemon and place the rinds inside the cavity of the chicken, along w/1 Tbsp of Chicken base (or 1 cube of bouillion). Place chicken in crockpot. Sprinkle with Paprika and Parsley. Poor lemon juice over the top and remaining chicken base (or sprinkle bouillion cube). Cut potatoes, parsnips and onion into large slices & position around the chicken. Pour mushrooms on top. Cookbook recommends to cook on high for 3 1/2-4hrs. I cooked on low for 8 hrs (until internal temp reaches 180 degrees). You can use the broth to make an excellent gravy.
