Peanut Butter Cookies

Ingredients
Smooth Peanut Butter ( 3/4 cup )Shortening ( 1/2 cup )Brown Sugar ( 1-1/4 cup: firmly packed )Egg (1 large)Soy milk ( 3 tbsp )Vanilla Extract ( 1 tbsp )All-purpose flour ( 1-3/4 cup )Baking Soda ( 3/4 tsp )Salt ( 3/4 tsp )
Directions
1. Preheat oven to 375 F

2. Cream peanut butter, shortening, brown sugar, egg, soy milk, and vanilla in a large bowl

3. Sift flour, baking soda, and salt in a medium bowl

4. Blend wet and dry ingredients together

5. Drop tablespoon sized portions onto baking sheet, press lightly with a floured fork in a criss-cross pattern

6. Bake for 7 minutes at 375 F
