Classic Tabbouleh

Ingredients
1 cup Bulgur1/4 cup Extra Virgin Olive Oil3 tbsp. Lemon Juice (or substitute lime juice-my preference!)1 clove Garlic1/2 tsp. Salt (could be omitted)4 oz. Feta Cheese1 cup Parsley (chopped)1 medium Tomato (diced)1/2 cup Green Onion (diced)1 Medium Cucumber (remove seeds) (diced)
Directions
Mix bulgur with 1 & 1/2 cups of boiling water in a large bowl; cover. Let stand for 20 minutes or until the bulgur is softened.
Stir in oil, juice, garlic, and salt until well blended.
Add remaining ingredients and mix lightly.

Serving size is approximately 1/2 cup

    I made this today, and it is absolutely delicious! I left out the feta, mainly because I forgot to buy it, but the end result was fantastic! Without the feta, this weighs in at about 105 calories/serving. Love it!! - 5/25/08
