Sauteed Peppers

Ingredients
Green Bell Pepper (1 large)Yellow Bell Pepper (1 large)Red Bell Pepper (1 large)Smart Balance Spread (1 Tbsp)Salt (1 tsp ~ optional and not included in nutritional info)
Directions
Heat pan on medium heat
Chop peppers into strips (remove seeds)
Add 1 Tbsp Smart Balance to hot pan
When spread is melted, add the peppers and stir well to coat with the spread
Cover pan and let cook about five minutes
Uncover, stir, add salt if desired, recover and continue cooking another five minutes
Remove from heat and let sit, covered, for 2-3 minutes
Enjoy!

    Sauteed peppers are incredible!! But I'd skip the Smart Balance and just use a little bit of olive oil. Real food as opposed to manufactured food seems healthier to me. - 3/27/07
