Ingredients
1 Can Black Beans1 Medium Carrot, diced.5 Cup Broccoli, diced1 Cup Raw SpinachSalsa, hot sauce, canned green chiles and other seasonings to taste
Directions
Combine all ingredients in a pan with enough water to cover, season to taste, and simmer until the vegetables are tender and the flavors are mixed. Serve with rice, corn bread, burrito fixings, or just some fat free sour cream. Makes about 3.5 one cup servings.
