Bean & Spinach Ravioli

1/2 cup pre-cooked or canned white beans (I cooked my own; used a tsp of becel olive oil marg in the cooking water)50 grams of frozen chopped spinach1/2 cup part skim ricotta cheese30 wonton wrappers
Heat a large pot of water. Bring to a boil.
Meanwhile, defrost the spinach in microwave. Squeeze out excess moisture. Place in food processor with beans & cheese. Process until smooth. You should have approx 1 cup of filling.
Spread out wrappers on a counter. Place 1 tsp of filling on each wrapper. Moisten edges and fold on t he diagonal. Seal edges.
Boil in water for about 2 minutes.
Top with tomato sauce, diced tomatoaes, and/or cheeses. YUM!
Makes 3 servings of 10 ravioli each.

I'm just starting on my eating clean journey. I was thinking that with eating clean, you advoid white flour and the only wonton wrappers I can find are made with white flour? - 1/2/11

You are right. Won ton wrappers are made with white flour. I made this recipe before really getting into clean eating. You could make your own wrappers... lots of work. lol. I can no longer tolerate wheat of any kind, so I don't even make this recipe anymore.
