Spanish Tortilla

Ingredients
3 medium potatoes, precooked and then cut into chunks, crisped in oven1 tbsp (or less) olive oil3 eggs1/2 cup milk1 rasher bacon, chopped30gms Parmesan cheese, grated1 tsp dillsalt and pepper (ground)
Directions
Microwave potatoes until cooked. Cut into chunks. Crisp until skins are golden.

In small non-stick pan, cook bacon which has been chopped into small pieces. ONce cooked, take out of pan, drain fat.

Using same pan, cook pre-crisped potato chunks.

Pour over egg mixture (including milk, dill, s&p) and grated parmesan cheese. Add cooked bacon pieces.

Cook until egg has cooked through. Serve and enjoy.
