Nonfat vegan oatmeal pumpkin muffins

Ingredients
1 cup old fashioned oats1 1/2 cup whole wheat flour2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tbsp cinnamon1/2 tsp freshly ground nutmeg1/4 tsp cloves1/2 tsp allspice1/2 cup brown sugar2 cups canned pumpkin or 1 15oz can1 snack size sugar free natural applesauce if you don't have this, you can add 1/2 cup total of water1/4 cup water 1 tsp vanilla
Directions
Preheat oven to 350 degrees. Spray muffin pan with nonstick spray.

in large bowl add all dry ingredients and whisk together to blend. Add pumpkin and water and applesauce if using, and mix gently just until it's completely combined.

Divide batter into 10 muffin cups, the batter can be full in muffin cup, (it won't spill over they will just rise into a muffin top) and bake in center of oven until toothpick placed in center of muffin comes out clean, about 19-22 minutes.

When cool these can be frozen and wrapped in plastic and placed in large ziplock and taken out and placed in microwave for a minute or so to enjoy when needed.
