Ingredients
2 c cooked black eyed peas1 med red bell pepper2 scallions1 clove garlic1 small avocado1 c grape tomatoesjuice of 1 lemon3 tbsp olive oil3 tbsp cilantrono-salt seasoning to taste
Directions
combine peas with chopped red pepper, sliced scallions, chopped garlic, cubed avocado, halved tomatoes, lemon juice, olive oil, and chopped cilantro. chill and serve. makes 4-1 cup servings.

    Great recipe! I used about 1 tbsp less of olive oil and used the green onions I had in the fridge instead of the shallots. I took this to a potluck and it was a hit! Good summer recipe. - 6/10/11

    Tasty, healthy, simple, fast. My kind of recipe. I see no problem in plating this salad atop a large mound of romaine, adding a couple crackers or 1 whole wheat toast... a complete lunch, or dinner if you want to add a lite dessert. - 3/24/07
