Beef Borscht

Ingredients
1 lb Stewing Beef4 fresh Beets, peeled & cubed2 cans beef broth4 carrots, sliced1/4 c cornstarchVinegar
Directions
8 one cup servings
Brown stewing beef
Add broth, cook for about 1/2 hr
Add peeled, cubed beets and peeled & sliced carrots
Cook for another hr or more, til beef is tender
Mix 1/4 c cornstarch with water
Add to soup mixture til just slightly thickened, as though you were making gravy
Add vinegar, a little at a time to your desired taste
