Taco Salad

1 can black beans, rinsed and drained1 can corn, drained1 cup diced fresh tomatoes4 cups shredded cabbage1 cup shredded carrot1/4 cup salsa1 TB reduced calorie ranch dressing1 TB Lime juice2 TB fresh chopped cilantro3 cups shredded romaine or leafy lettuce or spinach6 oz crushed tortilla chips (1 oz per serving)1 1/2 cup shredded reduced fat cheddar cheese
Mix all ingredients except lettuce, tortilla chips and cheese in a large bowl with a lid. Cover and shake to distribute dressing. Just before serving, lay 1 oz crushed tortilla chips on a plate, top with 1/2 cup lettuce, 1/6 of the salad mixture, warm chicken taco filling, and 1/4 cup shredded cheese. Chicken taco filling 1/6 recipe adds 132 calories, 1 gram fat.
