Quinoa Fried "Rice"

Ingredients
4 cups Quinoa, cooked3/4 cup Egg Substitute1 Tbsp Sesame Oil1/2 cup Scallions, chopped4 Garlic Cloves, minced1 Tbsp Ginger, minced1 Large Red Bell Pepper, chopped1/2 cup Carrots, chopped8 oz Mushrooms, sliced1/2 cup Peas, frozen2 Tbsp Soy Sauce, Low Sodium
Directions
1) In a nonstick pan, with cooking spray, cook egg substitute. Set aside.
2) Add sesame oil to skillet or wok, heat to medium and add scallion, garlic, ginger, red bell pepper, carrots, mushrooms and peas.
2) Add soy sauce and stir.
3) Add eggs, mix well.
