1 1/2 cups flour1 tsp cinnamon1/2 tsp baking soda1/4 tsp baking powder1/4 tsp ground nutmeg1 cup sugar1 cup finely shredded unpeeled zucchini1/4 cooking oil1 egg1/4 tsp finely shredded lemon peel
Combine flour, cinnamon, baking soda, baking powder, and nutmeg in a separate bowl. In another bowl combine sugar, zucchini, egg, oil, and lemon. Add wet to dry and mix until just combine.
Bake in a greased 8x4x2 in. loaf pan at 350 degrees for 40-50 minutes until firm to the touch.
