Australian Sausage Frittata

3 bratwurst sausages (or your faveorite sausage)1 medium red onion, finely chopped (1/2 large)cooking spray 1 medium red capsicum, chopped finely 6 eggs 1/2 cup skim milk1/2 cup tasty cheese, coarsely grated 1/2 cup flat leaf parsley, chopped
Preheat oven to 350°f Lightly grease a 6 cup square casserole dish.
Heat a large frying pan over moderate heat. Cook and turn chipolatas for 4-5 minutes or until cooked. Drain on paper towels. Spray onion with oil. Add to pan. Cook and stir for 3 minutes. Add casicum, cook for 4 minutes more or until vegies soften. Transfer to a medium bowl, with the saugage let cool.
Whisk egg, milk, cheese and parsley in a large jug. Stir into onion - sausage mixture. Pour into prepared dish. . Bake, uncovered, for 30-35 minutes or until mixture is set.
To serve, cut frittata into slices.
