Ingredients
17 ounces chicken1 1/2 cups black beans1/4 cup salsa1 Tbsp Olive oil3 Italian tomatoes
Directions
Cook chicken in oil and add other ingredients. Simmer for 10 minutes. Enjoy. Makes 5 servings. Serve with veggies and/or fruit.

    I am going to try this weekend. Did you use skinless, boneless chicken breasts? Also, did you fry it in the oil or bake it? With flour or without? Sorry, cooking is new for me. LOL. Thanks.

    Yes, I used two large skinless, boneless chicken breasts which came to 17 ounces. I cut them in bite-size pieces and fried them in the oil without flour. As long as it is browned on all sides it should be OK because you simmer it longer in the juices when you add the beans (basically a can). :-)
