We loved them! Definitely a "keeper"! I doubled recipe for 2 of us & found there was no need to double the oil & spices. - 2/9/09

I thought sweet potato skins were inedible so I peeled the potatoes and they tasted great.

A definate 'make-again' recipe. These were delicious! I think next time, though, I'll cut and spread the potatoes on a baking sheet then lightly spray them with EVOO and sprinkle the seasonings. I spent a lot of time cutting, tossing, and coating. - 2/8/10

Good, but I prefer them with cinnamon & nutmeg. Love sweet potatoes, and enjoy trying new recipes for them. - 1/7/09

I love sweet potatoes cooked like this. My favourite combination is rosemary, salt and pepper. Sometimes I even turn them into mashed sweet potatoes after I roast them, with a bit of butter and milk. Yum! - 1/6/09

I've never been a big fan of sweet potatoes, but the price was right in the store and they are packed with nutrients so I bought one. Cooking for one can be a challenge, but this should be perfect! I'll be making this tonight. - 11/5/08

THis is delicious. I cut up a large onion and added to 3 sweet potatoes. It is so naturally sweet from the potato and thyme. - 3/28/08

I liked this a lot. Different from traditional sweet potato recipes for Thanksgiving, and that was nice. I didn't have Thyme leaves so I used dried/ground which probably wasn't as good. - 11/24/11

You have turned a self-professed sweet-tator-hater into a sweet-tater-lover! OMG this is so awesome, I've made them twice now and I love them more than french fries. The flavor options are endless! Italian, garlic, parmesean, herbish, curry, lord, the sky's the limit! 5 full stars! *****

I loved it, DH asked me to refrain from putting thyme in any dish. He says it tastes like "Mold". The thyme I am using is very recently purchased from Costco. Any opinions? - 2/16/11
