Mashed Potates with Caramelized Onions - no milk or butter!!!

7 medium potatoes, peeled and cut into quarterssalt and pepper to taste3 onions, sliced7 tbsp olive oil, divided2 tbsp balsamic vinegar2 tbsp water
Boil the potatoes in a pot with just enough water to cover. Boil for about 40 minutes or until soft enough to mash. Drain, SAVING THE POTATO WATER. Put the potatoes back in the pot and cook for a few minutes until any remaining water evaporates. Add 4 tbsp olive oil to potatoes and mash. Add reserved potato water slowly while mashing until at desired consistency. Add salt and pepper to taste
While potatoes are cooking, heat a pan over medium high heat. Heat 3 tbsps olive oil (I used less) and add onions. Let onions sit for 5 minutes without stirring then stir and cook, stirring frequently, for about 15 minutes until caramelized. Add balsamic vinegar and water and cook, stirring, until reduced.
Add onions to potatoes and stir. Enjoy!
