Chickpea Cakes

Ingredients

1 can chickpeas1/4 c onions1/4c peppers2tbsp scallions1 celery stalkdash of parsley2 tbsp flour 1/8c broccoli slaw1tbsp oil
makes 9 mini cakes
heat oil and veggies in skillet for 5 minutes
add chickpeas and veggies to food processor & chop for few seconds. do not over chop.
place in bowl and mix in parsley & any other spices.
mix in flour.
Place in fridge for 30 minutes.
Make little patties from the mix & place on frying pan 2-3 minutes each side.
