Cream of Broccoli Soup for 2

1 tsp unsalted butter1 medium onion, finely chopped1 clove of garlic, minced1 stalk broccoli [flowerette + stalk]1 cup vegetable stock3 tblsp half and half4 ozs 1% milk1 tsp curry powder
1. Melt the butter in a large pan, add the onion and garlic and cook for a few minutes until softened. Set aside
2. Pour stock, into a large microwave container, cook on high heat for 1- 2 minutes.
3. Steam broccoli in microwave steamer, 5- 7 minutes on high
4. Add milk, half and half, season to taste with salt, pepper, curry powder. Cook in high 2 minutes in microwave.
5. Ladle into bowls and serve garnished with the fresh chives
