Turkish Shepherd Salad

Ingredients
1 cup diced tomatoes (about 2 med. tomatoes)1 cup diced cucumber with skin (half - 3/4 of a cucumber)1/4 cup chopped scallions or green onions1/4 cup chopped, fresh parsleyjuice from half lemon (added to taste)2 Tbl Olive Oilsalt to taste
Directions
Mix tomatoes, cucumbers, onions, and parsley in a bowl. In a separate bowl, mix oil and about half the lemon juice. Add salt and more lemon juice to taste. Pour over salad and stir to coat completely. Refrigerate about 1 hour before serving.
