Enchilada Lasagne

Ingredients
1/2 kilo (1lb) extra lean ground beef1 can black beans, drained1 can refried beans, Spicy Jalapeno flavor1 can tomato paste1 packet enchilada sauce2 1/2 c. water1 cup shredded cheddar cheese12 flour tortillas, 8 inch
Directions
makes 12 1-cup servings
Coat bottom of casserole (larger than 9x13 is best, but 9x13 will JUST work) with non-stick spray
Prepare enchilada sauce as directed on packet
Brown ground beef (add 1t crushed garlic, if you like)
Add ground beef and black beans to enchilada sauce
Spread 1/2 c. sauce on bottom of casserole dish
Layer three tortillas over. Cover tortillas with 1/3 can refried beans. Layer 1 c. enchilada sauce mix, followed by a sprinkling of cheddar. repeat, topping it all with cheese.

bake 25 minutes in a 350 degree oven

    I've made a lasagna like this before. It sounds very similar. Really liked it. Don't care for hot flavors, so I just used regular refried beans when I made this recipe. The Enchildada sauce was enough. Also, I used low fat cheese and fat free beans, to lower fat even more. - 3/26/07
