Ingredients
6 small/med. granny smith apples (pealed and cut into 1/2 inch pieces - or sliced if you like it more chunky)1 cup pure maple syrup (divided)1/2 cup agave nectar (divided)1/2 teaspoon ground nutmeg1/2 teaspoon ground cinnamonJuice of 1/2 lemon1 cup flax meal1 cup oats1/4 cup whole wheat flour1/4 tsp nutmeg1/4 tsp cinnamon2-3 Tblsp Earth Balance Natural Buttery Spread
Directions
Combine 4 apples, spices, 1/2 cup maple syrup, 1/4 cup agave nectar and lemon juice in a sauce pan. Cook until apples begin to soften. Let cool slightly.

Cut butter spread into flax and cornmeal (may substitute 1 cup oats and 1/4 whole wheat flour for cornmeal - recommend adding additional cinnamon and nutmeg with this substitution). Add remaining maple and agave and a pinch of salt and mix thoroughly to make a rustic "pie crust" dough.

In a baking dish (or casserole) combine the cooked apples and remaining raw apples. Cover with crust dough. Bake uncovered at 350F for approximately 20 minutes or until crust is golden brown and crispy. Let cool slightly before serving.

May serve with non-fat frozen yogurt, sweetened plain yogurt OR similar.
