Zuccini Hash

Ingredients
2 mediun zuccini (approximately 3 cups cooked-4 cups raw) peeled and chopped in 1/2 inch pieces1 medium onion peeled and chopped (approximately 1 cup cooked)1 cup chicken- dicedsalt & pepper to tastePaprika4 Tablespoons unsalted butter
Directions
Preheat 10" saute pan to medium high heat. Put 1 tablespoon of butter in pan and brown chicken 2-3 minutes. Add Zuccini and onion and rest of butter and cook 8-10 minutes stir occasionally with wooden spoon (hash should be well browned). Season with salt, pepper and paprika. Serve with favorite egg dish.
