Ingredients
1/2 cup tomato sauceOne medium yellow onion, chopped1 tsp curry powder1 tsp turmeric1 tsp cumin3 boneless skinless chicken thighsApprox. 1/4 cup water
Directions
Pour the tomato sauce into the slow cooker and add the spices. Chop the onion and add to the cooker, being sure to mix well. You may choose to brown the chicken first, or add it directly to the slow cooker. Stir again once you have added the chicken, being sure to coat it thoroughly with the sauce and onions. Add the water to thin the sauce if desired.

Cover and cook on high for 3-4 hours, or on low for 6-8 hours.

Top with cilantro, if desired. Goes well over brown rice.
