Black Bean and Wheat Berry Salad

Ingredients: 1 cup raw Wheat Berries 1 cup Edamame, Shelled2-1/2 cups canned Black Beans-rinsed well 1/2 cup chopped red onion1 cup cherry tomatoes - cut in half1 cup diced english Cucumber1/2 red pepper - chopped1 jalapeno pepper - seeded and chopped (if you like an extra kick, use seeds too!)DRESSING:1 tbsp fresh Cilantro - finely chopped1 minced clove of Garlic1/4 cup Omega -3 Flax OilJuice of 1 lime
Cook wheat berries in 3 cups of water, simmering for approximately 1 hour. Drain and cool.
Rinse beans, add to to cooled wheat berries. Add remaining ingredients and toss gently.
Whisk ingredients for dressing and pour over salad. Best if refridgerated overnight.
Makes 14 - 1/2 cup servings
