Quinoa with Broccoli

Ingredients
2 cloves garlic1 c broth (veggie or chicken)2 Tbs lemon juice1/2 c quinoa1 c broccoli florets (I recommend you penny cut and freeze the stalks for soups)1/4 c sunflower seeds
Directions
Saute the onion and garlic in olive oil. Add the stock, and lemon juice ( or substitute 1/2 cup of the stock with white wine too if you have it). Bring to a boil. Stir in quinoa, cover and simmer for 20 min. Add broccoli on top, cover and simmer another 5 minutes. Toss and garnish with sunflower seeds (or cashews if you prefer).

Serve with the Chicken Tenders.

    I noticed that there were onion in the directions but there wasn't any onion in the ingredients list. I used 1/2 small onion. I also used the wine but I think that 1/2 cup was a bit too much. IF I use the wine again, I would only use 2 tsp. I loved the sunflower seeds in it. - 1/13/10

    Thanks so much for writing! Glad you liked the texture; sorry about missing some ingredients I tend to add minced garlic and onion to recipes as a habit and forget it's a key component :)
