1 lb. lean ground beef6 peppers (red, yellow, orange are fun)1 egg3 tablespoons taco seasoning2 cups salsa2 cups brown rice
Mix ground beef, egg, taco seasoning and salsa together. Partially cook the brown rice for about 20 minutes following package directions. Add rice to the mixture. stuff the mixture into the peppers and bake at 350 for 45-60 minutes.
