Black Beans and Rice

Ingredients
2 cups cooked brown rice1 finely chopped red pepper1 medium onion, chopped2 garlic cloves, minced1 teaspoon dried oregano1/2 teaspoon ground cumin1/2 teaspoon crushed red pepper flakes2 cups tomato sauce1 (15 ounce) can black beans, rinsed and drained1/2 cup shredded fat-free Cheddar cheese
Directions
In a large saucepan coated with nonstick cooking spray, combine the red pepper, onion, garlic, oregano, cumin and red pepper flakes. Cook over
medium heat for 5 minutes or until tender. Add tomato sauce and black beans; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through. Stir in rice. Sprinkle with cheese.
