Chicken Veggie Stir Fry with Fried Rice

Ingredients
3 boneless skinless chicken breasts thinly sliced1 tsp garlic powder1 Tbsp water1 10 oz package frozen stir fry veggies4 cups cooked white or brown rice (cold)1 small onion chopped2 Tbsp Extra Virgin Olive Oil3 Tbsp Lite Soy Sauce
Directions
-In a large frying pan, heat 1 Tbsp olive oil, add chicken and garlic powder, cook until no longer pink
-Add 1 Tbsp water
-Add frozen veggies, cover 5 mins or until tender
-Stir in 1 Tbsp soy sauce, cook for 1 more min
-Set chicken and veggies aside
-Cook onions in remaining oil until transparent
-Add rice stirring frequently until it starts to stick together
-Stir remaining soy sauce into rice until evenly distributed
-Serve chicken and veggies on top of rice
