Baked Beans: more beans, less gas

6 cups pinto beans1/2 chicken breast2 teaspoons fat1 onion1.5 cups tomato sauce2 tablespoons brown sugar2 tablespoons sugar3 teaspoons mustard2 teaspoons saltsmoke flavor (optional)2 t chili sauce (optional)
Place the beans in a pot and cover them with water. Let them sit about 10 hours (overnight) in the water. This allows some of the gas to escape. In the morning, pour off the water and again cover them with water. Allow them to simmer for a couple hours until soft and again pour off the water. In another pot saute the onion in the fat until brown. Then add the tomato sauce and stir in the sugar and spices. Add the beans and cubed chicken and stir until mixed thoroughly. Simmer for approximately 3 hours to allow the flavor to soak into the beans and stir occasionally. Makes about 12 1-cup servings

This is almost the same way I make dry beans and I agree it does do away with much of the gas. I add 1 tsp of Baking Soda to the soaking water then rinse very well, add new water and baking Soda then cook, rinse well again. I eat a lot of beans and this is a great way to help take the music out... - 5/29/11

This recipe will cut down on the gas, but if you want to cut the smell add some ground ginger over the top of the pot just before serving, and stir it in well. Small amount will not affect the taste of the dish. Use it with beans of all kinds. You still pass gas, but you don't smell it! - 5/13/09
