Spiced Banana Bread - Gluten-free Version - easily made not GF

1 C Sugar1/2 C Shortening2 Eggs, separated2 C Flour - I use Bette Hagman's 4 Flour Bean Mix Blend1.2 tsp. Soda1/2 tsp. Cinnamon1/2 tsp. ground cloves3 Bananas, very ripe, mashed1/2 C Chopped nuts, almonds or pecans
Cream together the sugar, shortening, and egg yolks. Sift the dry ingredients together, and add to creamed mixture. (If making gluten-free, you may want to add 1 tsp. xanthan gum, but it's not necessary.) Stir in bananas and chopped nuts. (Notice, nutritional info is for almonds, although pecans are very tasty, too.) Lastly, fold in whites of the two eggs (beaten lightly), pour into loaf pan and bake at 350* until done. 1 loaf pan takes about 60 minutes. Test with toothpick to make sure the inside is done. It tastes best the next day after being baked.
