Ingredients
1 can salmon, drained1 bunch scallions, minced1 Tbsp fresh herbs, minced (parsley, dill, cilantro, or basil)1 1/2 tsp Old Bay 1/4 cup breadcrumbs1 Tbsp mayonnaise 1 eggsalt & pepperflourvegetable oil
Directions
Makes 4 patties.

Mix salmon, scallions, herbs, Old Bay, breadcrumbs, and mayonnaise in a medium bowl. Salt & pepper to taste (though Old Bay is really salty, so I don't add salt). Carefully fold in the egg with a spatula until the mixture just clings together.

Divide mixture into four patties, cover with plastic and chill in the fridge for 1/2 hour.

Dredge patties in flour.

Heat a bit of oil -- a tablespoon max -- in a skillet over medium-high heat. Fry patties until the outsides are crisp and browned, 4 to 5 minutes per side.

You could make this more healthy without loss of taste by using unsalted canned salmon, use ground red pepper instead of old bay, use 2 egg whites instead of an egg and skip the mayo or use low fat, use whole wheat bread crumbs and use cooking spray instead of oil. - 7/20/09

I broil them in my toaster oven. Works as well as i spray with butter or olive oil spray. Saves on calories and I don't usually dredge in flour but keep plain. - 7/22/09

Thanks for the tip about chilling. It makes them less likely to fall apart while handling. - 7/30/09

SOMEONE WROTE THAT THERE WERE TOO MANY BONES IN THE CANNED SALMON.

THAT USED TO BOTHER ME TOO B/C MY MOTHER DIDN'T DEAL WITH THEM..

BUT I LEARNED TO FIND ALL OF THE BONES AND SMASH THEM WITH MY FORK. THEN I MIX THEM IN WITH THE SALMON B/C IT REALLY ADDS CALCIUM AND PROBABLY FISH OILS.

In response to LAUREN145: Old Bay is a spice that is full of flavor. Gives your food a nice kick. It's a tad spicy and very strong. You might want to use a little at first because it may overpower your food. I'm from Maryland and we use it on all our seafood recipes especially blue crabs..YUM - 8/7/09

I WHIRL THE CANNED SALMON WITH EGG IN BLENDER TO GRIND UP THE BONES - THEY JUST DISAPPEAR & TEXTURE IS MORE EVEN. HELPS YOUR JOINTS! - 2/8/10

I make my salmon patties with canned salmon, add 1 egg, 1/4 finely chopped onion, and I use whole grain crackers as the filler for more fiber. Cook in a tiny bit of olive oil, lower in calories and my family loves them. - 10/8/09

Why do you need to add the mayo, refregerate and dredge in flour??? I make this w/o and it is great I fry in a little olive oil. - 7/9/09

Yummy, my favorite. I'll make them for dinner, though I like to use lemom pepper and will try baking w/ Pam spray, also without the flour. - 8/4/09

I doubled the mayo, omitted the Old Bay but used Jane's Crazy Salt, used fresh parsley and basil, and no flour; didn't chill. Made 5 patties. Delicious! - 7/22/09

I noticed several comments about bones in the canned salmon. Just crush them with your fingers. - 1/30/10

I absolutely loved this recipe!!!! I am NOT a fish eater and once I got over the smell of the salmon (to me it smelled like cat food! ha!) I put it all together and boy was it YUMMY!! Didn't even taste like fish to me and that's a GOOD thing! Used cayenne, cilantro and some chives to help season! - 1/28/10

I loved it but one little cake wasn't enough to fill me up. I would probably make it again though. - 8/13/09
