Quick Chicken and Pasta Cassarole with Tomato and Spinach

Ingredients
Boneless, skinless chicken breast (1/2 split), cut into bite-size pieces1/4 cup white wine (optional)1/2 cup chopped onion1 stalk celery, sliced1 clove garlic, minceddash of cayenne pepper (optional)1/2 teaspoon dried oregano leaves2 cups water1 box POMI chopped tomatoes (750 grams)12 ounce Barilla Plus penne3 cups fresh spinach, coarsely chopped
Directions
Heat a heavy, non-stick skillet over medium-high heat, or use an electric skillet set to 400.

Add chicken and saute until cooked through. Add wine (or substitute a 1/4 cup water or chicken stock), onion, celery and garlic. Continue cooking until vegetables are soft.

Add water, tomatoes, cayenne and oregano, stirring until well mixed. Heat until bubbling then add penne. Stir to combine, place spinach on top and cover with lid. Cook for 12-15 minutes, stirring once or twice. Add more water if necessary. When pasta is cooked it's ready to serve.
