Smothered Chicken

Ingredients
1 1/4 lb. Boneless Chicken Breast1 tsp. oregano1/2 tsp. red pepper1/4 tsp. black pepper1/2 tsp. salt1 Tbsp. butter, unsalted1 whole green pepper, thinly sliced1 med. onion, thinly sliced1 C. mushrooms, sliced1/4 C. Shredded Mozzarella Cheese1/4 C. Shredded Cheddar Cheese
Directions
Mix oregano, red and black pepper and salt and sprinkle on both sides of chicken. Place chicken in non stick skillet and cook on medium until internal temp. reaches 165 degrees. Remove from pan and keep warm. Add to pan where chicken was cooked, butter, onion and green pepper. Cook until tender crisp, about 5 minutes. Add mushrooms and cook an additional 3 minutes. Place chicken back in pan and divide vegetables on top. Divide cheeses on top evenly, cover and remove from heat. Serves 4.
