Chicken and Black Bean Chili

Ingredients
3 boneless skinless chicken breasts (about 450g)2 tsp chili powder2 tsp ground cumin0.5 tsp salt1 green bell pepper, diced1 small onion, chopped3 cloves garlic, minced1 can (14.5 oz) diced tomatoes, undrained1 cup chunky salsa1 can (15 oz) black beans, rinsed and drained
Directions
Combine chicken, chili powder, cumin and salt in crock-pot, tossing to coat chicken with spices.
Add bell pepper, onion and garlic; mix well. Stir in tomatoes with juice and salsa. Cover; cook on low 5 to 6 hours or on high 2.5 to 3 hours, or until chicken is tender and thoroughly cooked through.
Turn crock-pot setting to high; stir in beans. Cover; cook 5 to 10 minutes or until beans are heated through.
Topping suggestions (not factored into nutrition calculations): shredded light cheddar cheese, diced avocado, fat-free sour cream, crushed whole grain tortilla chips, or chopped cilantro.

    different taste than I'm used to for chili, but yummy. Did fresh tomatoes instead of canned and ready cooked chicken strips along with homemade salsa for faster cooking. Good recipe! - 10/7/11
