Saucy Garlic Chicken

Ingredients
4 boneless, skinless chicken breasts2, 14.5 oz cans of chicken broth4 heaping teaspoons of chopped garlic2 tbsp olive oil.5 tsp oregano, dried1 tsp basil, dried2 tbsp lemon juice4 tbsp cornstarchsalt and pepper to taste
Directions
Makes 4 servings

Rinse and pat dry the chicken. Sprinkle salt and pepper on both sides of the chicken.

In a large skillet, over medium-high heat, heat up oil. Add garlic and chicken to the hot oil. Cook chicken on both sides until slightly browned (about 5 minutes on each side).

When chicken is browned, add chicken broth, oregano, basil and lemon juice. Bring to a boil. Turn heat down and simmer until chicken is done (between 20 and 30 minutes).

Take chicken out of the pan. In a separate container, put cornstarch in with enough broth from the pan to make the mixture runny but not too watered down. Bring broth to a boil, slowly stir in cornstarch mixture, stirring constantly. Bring back to a boil, boil for 1 minute and then let stand for two minutes. Sauce should have thickened.

Spoon sauce over chicken breasts and serve.
