tomato, mushroom & feta fritata

Ingredients
4 slices low fat canadian bacon1/2 C. fresh mushrooms8 - 10 cherry tomatoes2 oz feta cheeseMrs. Dash Garlic & Herb Seasoning2 large eggs1/3 cup egg whites1/4 C. 1% milk3 TBS parmesan cheese3 TBS seasoned bread crumbs
Directions
Preheat oven to 325 degrees
Spray saute pan and 8" glass pie pan with cooking sray
chop mushrooms, canadian bacon & tomoatoes
brown mushrooms in saute pan
add tomatoes and bacon until warmed through
season with Mrs. Dash
beat eggs, egg whites & milk in small bowl add Mrs. dash to taste
place mushrooms, bacon & tomatoes to pie pan
crumble feta on top
pour egg mixture over top
bake at 325 for 30 minutes
remove pie pan and spinkle with parmesan cheese and bread crumbs
place under the broiler until top browns (watch closely)

    Excellent and easy. I had some grated zucchini on hand, so added a 1/2 cup of this as well. Personally, I think more tomatoes and mushrooms would be good, as well as some spinach. Might need to adjust egg volume to maintain consistency. - 9/26/12

    I have never made a fritata before but this was easy and tasted very good. I used Bacon Bits and added chopped green onions. - 3/26/11
